Golden brown and savory with just a touch of crunch, these pillowy-soft potato puffs are heaven in a bite. And they make the perfect appetizers!
Ingredients

1 Carrot

3 Garlic, clove

1/2 Onion, raw

1/4 cup Parsley

1 cup Ground Beef – substitute with beans, tofu, turkey, or chicken

1/2 cup Green Chili Peppers, canned – drained

1/4 tsp Salt – or to taste

1/4 tsp Black Pepper, ground – or to taste

1 Eggs, whole large
-
2 tbsp Milk, whole
-
1 cup Breadcrumbs – substitute with panko

4 Potato, cooked – peeled, cooled, and mashed

1/4 tsp Garlic Powder

1/4 tsp Salt – or to taste

1/4 tsp Black Pepper, ground – or to taste

1 Eggs, whole large
Directions
- In the magic bullet Kitchen Express™ or in a food processor, mix together potato, garlic, 1/4 tsp pepper, 1/4 tsp salt, and 1 egg and set aside.
- For the stuffing, mince carrot, garlic, onion, and parsley together in the food processor and set aside.
- In a pan, brown beef for about 5 minutes and add in the veggie mixture (in step 2), green chilies, salt, and pepper. Cook for another 5 minutes.
- For the egg wash, mix together egg and milk.
- To form the potato balls, cover 1 tbsp of stuffing with 2 tbsp of the potato mixture, forming a ball so that stuffing is in the center.
- Roll the balls in egg wash, then roll into breadcrumbs until covered.
- Preheat the air fryer at 200C for 5 minutes.
- Add 6 balls to the fryer in a single layer.
- Air fry for 15 minutes, turning balls over at the halfway mark.
- And repeat for the remaining 6.
