This tangy, sweet, and spicy salsa is guaranteed to freshen up your next fiesta.
Ingredients:
800g tomatillos, canned - drained
2 jalapeno pepper - seeded for mild head; add in extra for spicier salsa
4 garlic clove
1 cup cilantro - packed
1/2 onion, raw - red, quartered
2 tbsp lime juice
2 tsp salt
1 tsp black pepper, ground
2 tsp garlic powder
2 tsp onion powder
1 1/2 cup pineapple, fresh
Instructions:
Add the tomatillos, jalapeños, garlic, cilantro, onion, lime juice, salt, pepper, garlic powder, and onion powder to the blender. Blend on Low for about 20 seconds, until mostly smooth.
Add the pineapple chunks and pulse about 7 times, or until the salsa reaches a chunky consistency. For a smoother salsa, continue pulsing until the mixture reaches your desired texture.
