Ingredients
3 medium Carrots, chopped
2 medium Tomatoes, chopped
1/4 cup Cashews, soaked for 1 hour
2 Spring Onions, chopped
2 cups Vegetable Stock
Salt & Pepper, to taste
1 tbsp Olive Oil
Directions
Preheat oven to 200°C
Toss carrots, tomatoes, and spring onions with olive oil, salt, and pepper
Roast vegetables for 20–25 minutes until tender
Add roasted vegetables and soaked cashews to the pitcher of the nutribullet SmartSense™ Blender Combo
Attach pitcher to the motor base and blend until smooth and creamy
Transfer to a pot and warm gently on the stove if needed
