Ingredients:
4 large carrots, peeled and julienned (or grated for a softer texture)
¼ cup roasted peanuts, roughly chopped
2 spring onions, thinly sliced
2 tbsp fresh coriander, chopped
1 tbsp sesame seeds (optional, for extra crunch)
For the Dressing:
2 tbsp fresh lime juice
1 tbsp soy sauce
1 tbsp sugar (or honey)
1 tbsp rice wine vinegar or apple cider vinegar
½ tbsp sesame oil (optional, for nuttiness)
1 small red chilli, finely chopped (optional, for a mild kick)
Method:
Place the julienned carrots in a large mixing bowl. Add the chopped peanuts, sliced spring onions, fresh coriander, and sesame seeds (if using).
To make the dressing, in a small bowl, whisk together the lime juice, soy sauce, sugar, rice wine vinegar, and sesame oil (if using). If you want a hint of heat, add the chopped chilli.
Pour the dressing over the carrot mixture. Toss well until everything is evenly coated.
Let the salad sit for 5-10 minutes to allow the flavours to meld, then give it a quick toss again. Transfer to a serving bowl and enjoy!
